LOCATION :
The Pascal Jolivet Domaine covers 49.50 acres in Sancerre, with vineyards close to the villages of Bué, Verdigny and St Gemmme. 8.60 acres are planted with
Pinot Noir.
VINIFICATION :
The Pascal Jolivet Rose is a blend of direct press and ‘saignée’ production method rosé wine. The juice is produced from macerated Pinot Noir grapes that have not
been sorted by hand or de-stemmed. The philosophy of the estate is to let nature take its course as much as possible. The juice is fermented naturally, without adding cultivated yeasts in conjunction with thermoregulation.
