LOCATION :
The wine region of Sancerre is situated 200 km South of Paris, undulating at an altitude between 200 and 400 metres. The Loire on the Eastern side of the hilly environment creates a relatively temperate microclimate for the wines.
VINIFICATION :
Biologically cultured, the grapes are fermented naturally, without the addition of yeasts. After 12 months of maturing on the lees, the wine is bottled without filtration nor cooling.
SOILS :
Selective parcels among the calcerous ground in Champtin.
TASTING NOTES :
From chalky soils in the village of Champtin, this is made from organically grown grapes with natural yeasts. A reductive matchstick nose shows lovely citrus fruits. The palate has a really nice mineral core with taut citrus and pear fruit, real complexity and nice texture. Very fine and expressive with keen acidity.
FOOD AND WINE MATCHING :
This wine enhances the enjoyment of shellfish, fish cooked in butter and white meats and poultry.
