Valdubon Crianza

Valdubón Crianza is made with Tinta del País (Tempranillo) grapes from vines older than 40 years. The original vineyards of Valdubón Crianza are found in different areas of Ribera del Duero, with Roa, Pardilla and Milagros being their main origins.

A maturation control is carried out on all the plots that supply Valdubón, establishing the optimal harvest date for each vineyard. The evolution of the Baumé degree, acidity, tannin and color is controlled. On the basis of the results obtained, those vines that stand out for providing grapes with a high concentration of fruit and high phenolic load are chosen for Valdubon Crianza, which ensure good aging potential.

The cut grape is transferred to the winery as soon as possible, being ground before 10 am. since its collection. The harvest takes place between the months of September and October depending on the weather. Valdubón begins to cut at the ideal time to guarantee an optimal sanitary state and a good acidity-sugar balance.
