Valley & Vineyard
Chile’s extensive Central Valley presents a rich variety of climates ideal for vinegrowing..It’s here that our company has its main vineyards, and in particular in the sub-valleys of Rapel and Maule. The climate is Mediterranean with rainfall prevalent in the winter and a long dry season with fine weather and high temperatures. The thermal differentiation between the warmest month and the coldest is 11ºC. The soils are generally alluvial and volcanic and possess a high organic content especially near to Talca. The vines are vertically trained and benefit from drip irrigation. Leaves are removed in moderation to leave the bunches only exposed to the morning sun, which ensures optimum ripening and keeps the vineyard in prime condition.
Fermentation & Ageing
The juice is fermented for 5 days in stainless steel tanks at temperaturas between 28ºC and 30ºC using selected yeasts. Post-fermentation maceration lasts 10 days at 25ºC and malolactic fermentation occurs spontaneously at 20ºC.
Tasting Note
Our Carmenere has a bright and intense ruby red colour. Its aromas are full of character, particularly ripe black fruits, spices like pepper and accompanied by more subtle notes of vanilla and cinnamon. On the palate the wine is medium-bodied, full of character with ripe and soft tannins and a long lingering finish.
Food Serving Suggestions
Cold Pasta, grilled red meats, white meats in sauce, meat and vegetable stew and smoked salmon. Serve at a temperature of 18°c
