The Kyoho fruit was hand-picked late in the growing season (in March), cooled and then crushed and pressed. Some skin contact was given to the juice to give the wine its unique flavour and subtle colour. The juice was then cold settled and fermented at low temperatures to retain the unique aromatics of the Kyoho grape. Fermentation was stopped early to allow some sweetness in the wine. The wine was left on lees to develop texture and creaminess on the palate.
