VINEYARD - Catarratto (85%), Inzolia (15%).
VINIFICATION AND REFINEMENT - After grapes removing from the stalks, soft pressing done in young wine about 60% and fermentation at low temperature. Refinement for about four months in steel tanks with frequent wine battonage to ensure the scents during time sediment. After the bottling a further refinement in the bottle for about one month comes after, at controlled temperature.
