Riddling: By hand for 4 weeks
Harvest: Last week in August
Fermentation: Old vine Pinot Noir, handpicked and selected. In the winery the Pinot Noir grapes are cooled down before crushing and only the free fall juice is collected. First and second fermentation with indigenous natural yeast. After first fermentation, the wine stays to mature until June after harvest, then is bottled for second fermentation.
Aging: Minimum of 42 months on lees in bottle.
Alcohol content: 12.5% alcohol by volume
Production: 20,000 bottles per year

Tasting Notes: Incredible freshness and tightness with fantastic acidity and minerality. Full bodies, compact and intense. Light yeast and bread dough. Impeccably balanced. Drink now or wait a couple more years.
