Winemaking
Cold maceration process in an inert atmosphere with the aim of extracting the varietal aromas. Soft pneumatic press is employed with a subsequent natural decantation of the must at low temperatures. Fermentation also takes place at a low temperature using the grape's own yeasts. It then ages in its own lees for at least 4 months.
