Vinification

Harvesting manually. Long pressing, in whole grapes, without adding sulphites. FA and FML 100%, with natural yeasts and bacteria – Long aging, on lees, which gives aromatic complexity, fat and length in the mouth. Extraction from the air, by gravity. No filtration

Specificities

This wine is an atypical aligot, hence the choice to sell it under a label of “Vin de France”: exuberant in the nose, with notes of fruit of passion and blackcurrant flower as intense as surprising, It is fat to attack and of good length. The mouth is powerful, expressive. Very aromatic but totally unclassifiable, everything that one does not expect in a Burgundy Aligoté!

Pairing

To try for a refined aperitif, with a carpaccio of Saint Jacques.
Then it will accompany worthily raw fish or marinated scallops, roasted or wrapped river fish or spring asparagus.
