Terroir
Lying between the Pyrenees and the Atlantic Ocean, this terrain is made up of clay soils and rounded galet pebbles which, when combined with the prevailing mild yet demanding climate, produce the perfect conditions for growing the renowned Jurançon grapes Petit Manseng and Gros Manseng. The vineyards all face south, so the grapes soak up sun all day, particularly during the indian summers so often enjoyed by this part of France.
Vinification
Traditional methods of vinification in stainless steel tanks at low temperatures are pivotal to the winery here, to extract the distinctive varietal flavours. Partial alcoholic fermentation allows the retention of residual sugars at a level of 50-60 g. per litre. The wine is then matured in vats. Blend: Petit Manseng and Gros Manseng.
