It is extremely fresh, lively, delicate with a natural balance of taught, racy acidity and underlying richness and texture. This Champagnes cuts and yet softens with creamy mushroom notes and ripe stone fruits. A Champagne that cleans the palate rather than laying heavy on it. It is wine that needs some oxygen to fully come alive and a couple of hours after releasing the cork, the wine opens up and shows depth of flavour and complexity alongside its zingy freshness. A lovely apero, it also matches very well with some smoked salmon, some salty snacks or a light fish mousseline as an appetiser.

Resonance Champagne Marie Courtin Extra Brut , Biodynamic wine, 100% Pinot Noir, natural Champagne full of energy, tension and flavour. 'Résonance' refers to the balancing energies of earth and sky that affect the creation of a wine from its surrounding terroir. This beautiful natural sparkling wine is the first from Biodynamic producer Dominique Piollot and is 100% Pinot Noir (the main grape of the region of the Cotes des Bars). A biodynamically farmed Pinot Noir sourced from massale selection vines 35-40 years in age from a single parcel located in Polisot (Côte des Bar). The fruit for Resonance comes from the top of the slope where there is little topsoil with clay and Kimmeridgean limestone bands similar to those found in Chablis. The wine is fermented in stainless steel using native yeasts for both fermentation, aged in stainless steel and bottled with no dosage.
