Vinification
The grapes were picked at optimum maturity, with excellent flavour concentration. After harvesting, all the fruit was crushed, destemmed, and direct pressed with no skin contact. The clarified juice was fermented at cool temperatures to maximize flavour expression. Approximately half of the wine was fermented and matured in French oak, either new or up to 3 years old, and a portion underwent malolactic fermentation.
