Harvest :
The grapes were harvested generally at the end of March, beginning of April. The yield of the vineyard is 10 to 12 tons of grapes per hectare from the Central Valley.
Vinification :
Prior to fermentation it undergoes a cold skin maceration at 15°C for 48 hours. Fermentation takes place with the inoculation of selected yeasts in stainless steel tanks for 7 days, with strict temperature control aimed at conserving the fruit aromas. The wine is kept in contact with the skins and seeds for 5 days. A third of the blend is kept for 6 months, in second use French and American oak barrels. This subtle touch of oak brings complexity and structure to the varietal aromas. Wine management prior to bottling incorporates modern techniques for maintaining the fruity characteristics and structure of the wine.
Tasting Notes :
Deep violet red in colour. On the nose, plum and ripe red fruit aromas are detected, as well as hints of spices and vanilla. Medium-bodied and well-structured. Sweet tannins, jam aromas and toasted notes are detected on the palate. Prolonged final persistence.
