VINIFICATION AND MATURATION
The handpicked grapes were 100% de-stemmed and underwent a cold maceration with skin contact for 4-5 days in stainless steel tanks. After alcoholic fermentation began the temperatures rose step by step and punching of the cap and pump-overs were performed (the rhythm depends upon the vintage). This fermentation of the skins took place over the course of three weeks. The juice was racked to 228L French oak barrels (25% new) where it underwent natural and malolactic fermentations. It was then aged in barrel for 12+ months and racked to tank afterwards, before a light filtration and bottling. Seventeen barrels were produced of this wine.
