Grapes : selection of Lambrusco grapes from Emilia.
Vineyard : vines with a GDC double curtain and a Guyot training system, with spurred cordon pruning, on mixed soil in the area situated between the central plain and the low hills of the province of Reggio Emilia and the province of Modena.
Vinification : the grapes, harvested in September and October, are vinified in red. After alcoholic fermentation at a controlled temperature with selected yeasts, second fermentation takes place, using the Charmat method, for 4-5 days at a controlled temperature of 12-14°C.
Description : pink, almost purple, mousse; refined and persistent perlage; light ruby red colour with purple tinges; fresh fruity aroma with floral hints; mellow and harmonious flavour.
Alcohol/Vol. : 8%
Food pairing: ideal throughout a meal, excellent with flavoursome first courses, pizza and roasts.
Serving temperature: cool 6-8°C.
