Dom Perignon P2 Rose
The Dom Perignon Rose P2 Vintage 2000 has two sides, expressing both warmth and coolness. The seductiveness of black cherries, dried figs and roses contrasts with deeper notes of nutmeg and cocoa powder, culminating in a finish of toastiness, smoke and ash. On the palate, the start is impressive is dominated by the consistency and integrated balance of all the different facets. The mouthfeel unfolds with suppleness and a round, even full-bodied sensation. The surprising finish tightens and then slackens, sappy and acidic, revealing notes of spices and dried citrus.

Dom Perignon P2 Rose
is pure energy. The exceptional feature of Vintages Dom Perignon is their evolution, not based on a linear process, but on specific expressive steps. These periods are called Plenitudes, priviledged moments where the wines vibrates more intensely.
P2 is the name of Deuxieme Plenitude by Dom Perignon, the result of 16 years of development. The energy reaches its peak. Thanks to its dark notes, mineral, spicy and iodized, the uniqueness of Dom Perignon is clearer and more intense than ever.
The Plenitude concept is the result of a long development: the Maison Dom Perignon has identified the aging process of a Vintage Champagne. It concentrates more on the wine three steps, rather than improving the process: P1 sees light 8 years after the harvest and it is the most famous Dom Perignon, the second (Pz) rests 15/16 years and reaches a new level of quality and the third (P3) will rest for other 20-30 years...
The year 2000 was marked by an understandably stressful succession of cold and rainy periods, followed by hot and stormy interludes. The summer was uncertain, with long stretches of dreary weather. Then, at the end of August, the weather turned miraculously beautifuL. This favorable period, which lasted through the entire harvest, is what made the vintage. Picking began with the Pinot Noir grapes on September 11, providing amazingly rich fruit.
