CHARBONNIÈRES:
A plot of 2.32 hectares (5.73 acres), where there are mostly grenache vines, scattered with a few mourvedre here and there. It is located in the Charbonnières area, on the northern side of the Crau plateau, and is mostly made up of molassic sand and sandstone. This is a pebble free area. The land register indicates this area was planted in 1900!
ESQUIERONS:
This 1.13 hectare plot (2.79 acres) is behind the castle, on the western side of the hill on which stands the village, in the place called “les Esquierons”. There are only grenache vines there: some planted in 1900 and the rest in 1949.
GALLIMARDES:
Half of the “Gallimardes” place was planted in 1934, the other half in 1959. It is 100% grenache vines, located in the southern part of the Châ- teauneuf du Pape area, on a pebble plateau. Manual harvesting of these three plots take place at the same time. We bring the harvest back to the winery in 50kg crates (110 lbs), where the grapes are destemmed and crushed. The temperature is closely monitored during alcoholic fermentation and pumping over is done daily. After the malolactic fermentation the wine is racked and ageing usually takes place in a wooden barrel. The wine is bottled 18 months later.
