90% Cabernet Sauvignon, 6% Petit Verdot, 2% Merlot, 2% Malbec


TASTING NOTES

This Wine is a dark red in color, with black and purple hues. Aromas of dark cherry, red currant, boysenberry and graphite with background baking spices (clove, allspice) and dried sage. Bright fruit, flavors of currant, berries and cherry, along with subtle toasty oak, are all framed by well balanced acidity and well resolved tannins. The finish is medium length, showing great structure with well integrated and resolved tannins.


VINEYARD NOTES

Grown in top vineyards across the Napa Valley, Starmont Cabernet lots were hand selected for their rich and robust flavors and fine tannins. We harvest the fruit in the early morning to preserve the fresh flavors and keep the skins intact. Upon arrival at the winery, the grapes were carefully sorted and de-stemmed, but not crushed, leaving over 90% whole berries.


PRODUCTION NOTES

All of the fruit was handpicked and hand sorted. After a cold presoak, the wine was macerated for an average of 20 days, fermented with a combination of wild and inoculated yeasts, and underwent native malolactic fermentation. The wine was aged 20 months in a combination of French and American oak (25% new).
