Valdubon Roble
Valdubón Roble is made entirely with the Tinta del País grape (Tempranillo). The original vineyards of Valdubón are distributed by different terms of Ribera del Duero, their main origins being the terms of Roa and Milagros.
An exhaustive monitoring of the care applied to the vineyard is carried out, focusing efforts on a severe thinning of bunches that leaves the strain with an average production of 7-8 bunches per strain, which represents a maximum yield of 5,000 kg / Ha.
During the harvest, the evolution of the Baumé degree, acidity and color potential are controlled. Based on the results obtained, a first classification is made, with Valdubón Roble being destined for those vineyards that stand out year after year for providing very fruity wines, with medium-high structure, good acidity and ripe tannins.
The vineyards destined for Valdubón Roble are harvested at night to guarantee an entry into the cellar at a low temperature and a soft start of fermentation that keeps all the fruit on the nose and in the mouth. The cut grape is transferred to the winery as soon as possible, being ground within 6 hours after its harvest.
