Produced with Cortese grapes from the zone of Novi Ligure (AL). The vines, trained with the guyot method, are about 15-18 years old and yield approximately 90-100 quintals per hectare. The grapes are generally harvested in early September.
The grapes are collected in baskets and immediately taken to the cellar for soft pressing. Only free-run juice, the finest part of the must, is used, stored in low-temperature steel vats for 24 hours to clarify. As soon as the must begins to ferment, it is transferred to temperature-controlled stainless steel vats to promote fermentation.
After alcoholic fermentation, Gavi is conserved and aged in stainless steel vats for 2-3 months. Before bottling, the wine is clarified, filtered, and stabilised only if absolutely necessary. The bottled wine is racked in temperature-controlled rooms until delivery.
Very light straw colour. Fine, intense nose. Very dry and crisp.
Server at 10° C. Excellent with seafood, appetisers, and first courses with fish sauces.
