Vinification
Red vinification with maceration on the skins for 12/15 days to enhance fully the characteristics of the grapes and the terroir. Alcoholic fermentation is followed by first racking and pressing. When the wine has undergone complete malolatic fermentation, it is matured in tonneaux and large barrels for 12 months. Then sojourns for a further six months in the bottle.
