VINIFICATION AND MATURATION
Maturity levels tend to be very high in Chevalier-Montrachet prompting the farm to take extra caution to ensure that the grapes are picked in time. The handpicked fruit was gently pressed and the juice was racked to stainless steel tanks, where it underwent natural fermentation. The wine was moved to French oak barrels (25% new, combination of 228L, 450L and 500L) for malolactic fermentation. It was aged in barrel for 15 months, with periodic lees stirring and then racked to tank where it rested for two months before a light filtration and bottling. Only three barrels instead of the usual five were produced. However, there is an additional barrel that comes from Philippe's parents from this vintage onward.
