Deep ruby with garnet hues. Lovely complex aromas of cassis, red currant and mulberry interwoven with anise, oregano, thyme, violets and tobacco leaf. The palate delivers layers of vibrant and pure black currant and plum, balanced by hints of cedar and vanilla pod. Lively acidity and fine-grained tannins provide a long, defined, mouth-coating finish.

This vintage offers all the finesse and distinctive character for which this historic family estate is famed. The nose is plush, with a backbone of eucalyptus, warm stone and scrubby South Aussie bush. The palate flows similarly, wound by chiseled yet fine tannins, expertly balanced by juicy fruit and bright acidity. Drink now-2031.

The family's flagship Cabernet is the 2016 Cyril Henschke Cabernet Sauvignon. As usual, the oak regime incorporates a reasonable 20% new French hogsheads, lending a discreet edge of pencil shavings to the scents of pipe tobacco, menthol and cassis. It's medium to full-bodied but exquisitely balanced so as to appear nearly weightless on the palate, buoyed by ripe, plush tannins that turn softly dusty on the lingering finish. It's another excellent vintage for what is arguably Eden Valley's top Cabernet Sauvignon.

Aromas of coal smoke, dried sage and thyme, as well as iodine, Indian ink, licorice and wet slate make for a very savory frame to the violets, blueberries and blackcurrants. The palate has a striking degree of power and purity with some quite ripe, concentrated dark-plum and mulberry flavors, stretched long on majestic cabernet tannins. The dark berries hold long and stay fresh to the very end. Some blueberries to close. This is an elegant, complex and powerful rendition of higher-altitude cabernet style. Great balance. 100% cabernet sauvignon.

Vitage Description
The 2016 vintage began with well below-average winter rainfall, followed by a warm and dry spring, which enhanced flowering and set to give average to above-average yield potential. Low disease pressure was maintained by one of the hottest Decembers on record, though temperatures cooled down in the New Year and rainfall around veraison in late January brought relief to the dry-grown, old-vine Eden Valley vineyards. This was followed by further rainfall in early March which eased the stress on all varieties. The fruit matured with an earlier harvest, as predicted due to an early Easter. Open, light and airy vine canopies allowed for good flavour, sugar and colour and mature tannins to develop at harvest, which was overall characterised by average yields but very high quality.
