An expressive and fruit driven, cold climate style of Pinot Noir, showcasing red acid fruit together with spiciness and floral notes. Its strong expression makes it an ideal example of the maritime valley. In the mouth it is fruity, juicy and fresh, with good acidity. The tannins are soft, sweet and well rounded. Perfect with grilled salmon and tuna steak.

Product details
100% Pinot Noir from estate grown vineyards planted in 1998 and 2004 with massal selections at different exposures (north, west and south). The grapes were hand harvested from March 25th to April 22nd. In the cellar, the clusters were destemmed, softly crushed and then placed in stainless steel tanks. Cold maceration occured at 46-50°F over 6 days, followed by alcoholic fermentation at 78-82°F for 10 days. Upon drying, the wine was immediately racked from the skins into stainless steel tanks. 90% of the wine underwent malolactic fermentation in stainless steel and 10% in french oak barrels. The wine aged for 6 months before bottling.
