Origin : San Carlos, Uco Valley, Mendoza. Hand-harvested and selected grapes, from own
low-yielding vineyards, from 1 to 10 April each year.
Winemaking : Fermentation in 10.000 lts tanks, with controlled temperature, 3 days with
cold pre fermentative maceration at 9°C. Afterwards, 10 days at 27°C. Total Maceration: 28
days. 100% malolactic fermentation. 70% of the wine was stored in French (60%) and
American (40%) oak during 12 months (30% new) and 6 months in bottle.
Tasting notes : It shows purple tones and violet traces. A wine of intense and expressive
aromas, emphasized by red fruits (like raspberry) and spices, combined with the
contribution of barrel aging. It has a mouthful of soft and balanced tannins and an important
concentration and balance, with a long and persistent ending.
Wine and food pairing : To be enjoyed with red meat, spiced lamb, Thai food and pasta
with rich sauces. Serve at 16-18°C. Drink now or keep up to 5 years.
