Vinification:
The grapes undergo soft pressing before being immediately separated from the skins. The fermentation is carried out at a low temperature (18°- 20° C) on steel tanks, prior to refrigeration and static racking of the must.
Ageing:
In steel for 2-3 months on its fine lees. After a cold stabilization in spring, the bottling process takes place.
